Position Title: Cotogna Assistant General Manager
The Assistant General Manager (AGM) supports the General Manager in directing the sustained success, growth, and daily operations of Cotogna. This role helps coordinate and manage service execution, guest relations, team development, facilities oversight, and operational efficiency. The AGM plays a key role in upholding the owners’ vision and ensuring Cotogna’s standards of hospitality, quality, and operational excellence are consistently met.
RESTAURANT OVERSIGHT AND IDENTIFICATION OF OPPORTUNITIES• Support the GM in monitoring and evaluating daily operations to ensure smooth service and effective management of the dining room.
• Assist in assessing food and beverage program performance through guest satisfaction, service flow, product mix, revenue, and cost analysis.
• Help identify operational opportunities and implement enhancements that optimize service, guest experience, and team efficiency.
• Partner with the GM and fellow managers to lead line-level staff, maintain service standards, and support the host, guest services, private dining, and culinary teams.
• Contribute to training, coaching, and ongoing development of the FOH team.
• Support the GM in fostering a culture of revenue awareness throughout the team.
• Assist in optimizing revenue across all channels, including main dining, guest services, private dining, and other streams.
• Assist with weekly reviews of sales, labor performance, product mix, and key metrics across FOH and BOH.
• Support the GM in preparing weekly sales and labor summaries and ensuring the team is aligned with targets.
• Participate in the annual budget and forecasting process by providing operational insights, feedback, and support to the GM and Director of Finance.
• Contribute to financial planning tied to revenue growth, beverage program development, and private dining.
• Support the recruiting, onboarding, training, and mentoring of FOH team members and junior managers.
• Assist in developing and reinforcing service procedures and standards.
• Partner with the GM and HR Manager to ensure compliance with company policies and departmental procedures.
• Help maintain appropriate staffing levels and ensure labor budgets are met while supporting service standards.
• Assist in overseeing the functionality, safety, and cleanliness of the restaurant environment.
• Support the GM in ensuring compliance with all sanitation standards and city, state, and federal regulations.
• Help maintain Cotogna’s high sanitation scores and respond to facility or maintenance needs.
• Support the GM, Director of Operations, and Owners in identifying partnership opportunities that align with Cotogna’s goals, including guest experience, PR, HR, and community initiatives.
• Help manage relationships with key vendors, service providers, and operational partners such as POS and reservation systems.
• Assist in contract oversight and communication to strengthen vendor relationships and service quality.

• Previous restaurant management experience required
• Food Handler’s certification
$105,000–$115,000. Compensation may vary depending on a candidate’s qualifications, skills, competencies, and experience.
