About Elbow Bread


Elbow Bread is a new retail bakery from baker Zoë Kanan, created in collaboration with Court Street Grocers and S&P Lunch. We're tucked into the elbow-shaped corner of Canal St. and Ludlow St., where Chinatown meets the Lower East Side.

We draw inspiration from our neighborhood’s history and think of ourselves as an “everyday bakery,” providing our community with their daily bread, pastry, and coffee. Our approach is craft driven and flavor-forward: we work with sourdough and natural leavening, freshly milled and whole-grain flours, and seasonal produce. As a small-batch business, we prize freshness and bake continuously throughout the day to keep our storefront stocked.

Offerings range from sourdough loaves and challah to inventive takes on laminated pastry, pretzels, knishes, babka, cakes, doughnuts, and more...! We’re a small team and are looking for a baker who is excited to grow with us and contribute to a baker-owned and operated project.

The bakery team operates on a 4/10 work week: 4 x 10hr days on / 3 days off. 

Baking tasks include:

  • Scale, mix, and shape naturally leavened and yeasted doughs

  • Laminate and form pastries including croissants, danishes, and specialty pastries

  • Bake off bread, pastries, and other daily production elements

  • Execute and support production for special events, collaborations, and holidays

  • Maintain organization, cleanliness, and sanitation of the bakery space and equipment

  • Support fellow team members to ensure smooth and efficient production each day

  • Helping with inventory and deliveries

What We’re Looking For in a Baker:
  • Minimum 1 year of experience in professional baking environment

  • Familiarity with sourdough processes and lamination

  • Comfortable working independently while also being a collaborative teammate

  • Curiosity, passion, and willingness to learn

  • Flexible with scheduling - must be available weekends and possible early mornings (4am start)

  • At least 18 years old and legally authorized to work in the U.S.

  • Able to lift and carry 50+ lb and stand for long periods of time
