Sacre Sucre is a French-inspired pâtisserie and café dedicated to craft, precision, and creativity. We produce all of our pastries from scratch, with a focus on technique, consistency, and aesthetic excellence. Our viennoiserie program highlights traditional laminated doughs and seasonal variations rooted in French pastry fundamentals.

We are seeking a skilled and detail-oriented Viennoiserie Maker to join our production team. This role requires hands-on experience with laminated doughs and a deep understanding of fermentation, shaping, and proofing. The ideal candidate is passionate about craftsmanship and thrives in a structured, collaborative kitchen environment.

• Produce, laminate, and shape croissant doughs (plain, chocolate, almond, and seasonal).

• Prepare and bake additional viennoiserie items such as kouign-amann, brioche, and buns.

• Manage proofing and baking schedules to ensure consistency and timing.

• Maintain quality and precision across all products.

• Follow production plans, recipes, and sanitation standards.

• Collaborate with the pastry team to ensure an efficient and organized workflow.

• Assist with preparation and testing of new seasonal or R&D items.

• Maintain a clean, organized, and food-safe work area.

• Minimum 1–2 years of experience working with laminated doughs in a professional bakery or pâtisserie.

• Strong knowledge of fermentation, butter incorporation, and dough handling.

• Excellent attention to detail and commitment to quality craftsmanship.

• Ability to work early mornings and weekends.

• Positive attitude, strong work ethic, and ability to collaborate with a team.

• Must be able to lift up to 50 lbs and stand for extended periods.

• Full-time position, typically 5 days per week including weekends.

• Early morning shifts required (starting around 3–4 AM).
