Job Description

Hamlin House is a Florida-inspired social and racquet club redefining hospitality in Orlando’s SoDo neighborhood. Spanning more than 28,000 square feet of indoor–outdoor space, the club features premium pickleball courts, curated cultural experiences, and a vibrant food and beverage program led by Chef John Fraser and JF Restaurants. JF Restaurants is looking for a dynamic Chef de Cuisine with an entrepreneurial spirit and a commitment to systems-based growth. This role requires strong creative and operational leadership. This is a hands-on leadership role responsible for overseeing kitchen operations, maintaining quality standards, and ensuring efficient food production. The ideal candidate is a strong team leader with a passion for excellence and a keen eye for cost control, menu development, and staff development.

The Chef de Cuisine will be responsible for the day-to-day operational needs while guiding a culinary team in creative process. Experience in elevated dining, high volume, seasonal menu planning, and ownership of operational systems and finances are paramount. 

  • Food Cost
    • Overall food cost for venue
    • Monitoring food cost on a daily basis based on purchases and sales
    • Monitoring ordering, receiving, storage, waste and menu
    • Placing orders
    • Monthly/weekly food inventory
  • Labor Cost
    • Overall labor cost for venue
    • Creating schedule according to staffing guide
  • Menu Development
    • Monitoring SOP’s for menu development:
    • Menu meeting
    • Testing/Tasting protocol
    • Standardizing recipes
    • Communication
      • FOH Managers
      • Reservations
    • Training (FOH&BOH)/Implementation
      • Updated MEP
      • Menu Descriptions
      • Line Up
    • Staff Development & Training
      • Assisting in hiring and onboarding for specific venues
      • Monitoring the training of BOH line employees
      • Training for all culinary team members
    • Meeting Representation
      • Daily/weekly meeting attendance.
    • Kitchen Maintenance
      • Implementing SOP for communicating maintenance issues
    • DOH
      • Implementing SOP for HAACP plan and all of its components
      • Implementing SOP for DOH-related issues
      • Checking HAACP logs on a weekly basis
    • Coverage
      • Breakfast, lunch, dinner, and events as needed.
