Job Description
Progressive French concept is seeking a passionate chef that is excited to meld traditional French technique with seasonal California ingredients, drawing inspiration from the local abundance and modern French coastal cuisine. Ample creativity within the concept, with the menu changing within the seasons based on product availability. The team is open to an up-and-comer who values working with a strong line team.
Executive Chef Responsibilities:
- Collaborate closely with ownership on seasonal and all menu updates, creating fresh cuisine using only the best ingredients available
- Lead with initiative, ensuring all food meets the highest standards of quality and consistency
- Train, and develop the culinary team to grow to their highest potential
- Treat employees and staff with care, dignity, fairness, respect, and recognition
- Manage and lead the team in cost controls
- Maintain proper ordering and inventory
- Follow best practices for safety and sanitation in the kitchen
Executive Chef Preferred Requirements:
- 3 years as an Executive Sous Chef or Chef Cuisine or 1 year as an Executive Chef
- Proven experience with French Mediterranean cuisine and technique, with an eye on current food trends and seasonality
- French background or professional experience in France a plus
- Expert knowledge and fully fluent in P&L, managing inventory, and cost controls
- Excellent communication skills and leadership qualities
- Exceptional standards for cleanliness, health, and safety
- Flexible schedule, including nights, weekends, and on holidays
Compensation Package Includes:
- Base salary in the $110-$125k range
