Job Description

Fish Cheeks is a vibrant restaurant serving contemporary Thai food with a focus on seafood. Originally located in NoHo, our newest location is in Williamsburg, Brooklyn. 

Named for the lean, tender cheek meat that is considered the tastiest part of a fish and a delicacy in Asia, the critically-acclaimed and widely-beloved restaurant offers a menu of unabashedly intense, fresh and vivid dishes that span the diverse regions of Thailand.

Fish Cheeks is a deeply personal concept for Jenn Saesue and Chat Suansilphong that celebrates the cultural heritage and the culinary artistry found in Bangkok and beyond. Brought together by their  shared desire to bring traditional Thai cuisine to NYC, the team decided to open Fish Cheeks, offering a menu that highlights the unfiltered flavors they craved from their upbringing in Thailand and re-creates the type of convivial and communal-style dining found across the country - from the street-stalls to fine-dining restaurants.

We are looking for a passionate and motivated Line Cook to join our  Restaurant team.  Compensation varies between $20 and $24 depending on experience. 

Duties & Responsibilities:

  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in wok, ovens, grills, fryers and a variety of other kitchen equipment.
  • Assumes 100% responsibility for quality of products served.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
  • Preps, stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
  • Maintains a clean and sanitary work station area in all kitchen areas.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Follow sanitation guidelines set forth by Health Department
  • Handles, stores and rotates all products properly.
  • Assists in food prep assignments during off-peak periods as needed.
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Performs other related duties as assigned by the Chef or manager-on-duty.

Qualifications:

  • A minimum of 3 years of experience in kitchen preparation and cooking.
  • Must be able to communicate clearly with managers, kitchen and dining room personnel.
  • Food Handlers permit
