What you’ll do

A Caramelized Productions Event Chef/Sous Chef assists the Chef de Cuisine (CDC) in executing culinary duties off-site at Caramelized events. This position requires preparing and executing menu items from Jon & Vinny’s, Cookbook, and Caramelized Productions. Caramelized Productions caters to both large- and small-scale events, so you must effectively manage teams of various sizes. Open communication with the PM (Production Manager) or Captain is essential to ensure the timely and successful execution of all menu items. This is an On-Call position.

Driving and Pre-Event Responsibilities:

  • Driving: Driving to the event is the responsibility of the Chef staffed for the event. The Chef de Cuisine (CDC) of Caramelized Productions is the only exception.
  • Arrival: If you are the Chef for the event, arrive at the commissary kitchen two hours before the event call time to inventory your food and review the pack-out.
  • Pre-Event Briefing: The CDC or Catering Operations Manager will schedule a briefing one to three days before the event, providing any necessary updates or changes.
  • Uniform & Presentation: Follow the uniform guidelines listed in the event details and set an example for the team. You are permitted to address individuals not adhering to the dress code.
  • Aprons: You are to distribute uniforms to the BOH team onsite and ensure to get them back at the end of the shift.
  • Food Preparation: Food should never be handed off to an untrained cook or a cook unfamiliar with the dish. Take the time to provide a quick demo and show a fully plated example of what is expected.

Responsibilities and Skills:

  • Proficient in preparing and presenting event dishes.
  • Reports directly to the Chef de Cuisine.
  • Supervises, plans, and executes event operations, ensuring smooth transitions and adherence to schedule.
  • Monitors team hours, assigning meals/breaks per California labor laws while considering the event timeline.The goal should always be to give all staff their meal break. 
  • Maintains quality and productivity standards.
  • Communicates effectively with the culinary team for efficient production.
  • Demonstrates high standards in taste, quality, and presentation.
  • Knowledgeable in food handling and sanitation requirements.
  • Maintains clean, sanitized work areas in compliance with health and safety standards.
  • Comprehensive knowledge of event food preparation.
  • Assists in training and developing culinary team members.
  • Cultivates a positive, safe, and progressive work environment.
  • Collaborates with the FOH (Front of House) Manager on-site to execute successful events.

Post-Event Responsibilities:

  • Vehicle Return: Returning the vehicle and unloading it is mandatory. You will be informed by the CDC if there are any special variables (such as multiple events or vehicle size) affecting this process.
  • Event Recap: If you are serving as the Event Chef, submit an event recap via email within 48 hours post-event.

Additional Requirements:

  • A valid driver’s license and a clean driving record are required.
  • It is your responsibility to adhere to all Carmelized Productions Vehicle Policy and promptly report any maintenance issues.
  • Must maintain up to date ServSafe certification.
