JOB OVERVIEW:
The Prep Cook is responsible for supporting the culinary team by preparing ingredients, maintaining a clean and organized workstation, and ensuring the kitchen operates smoothly and efficiently. The Prep Cook must uphold the standards of excellence that define JKS, professional etiquette and compliance with all health and labor regulations.
RATE OF PAY:
$18.00 per hour, non-exempt, FLSA eligible for overtime

KEY RESPONSIBILITIES:
- Assist in opening and closing procedures to prepare the kitchen for service and maintain cleanliness and organization throughout.
- Accurately and consistently prepare ingredients (washing, chopping, portioning, marinating, etc.) for daily service and specials.
- Follow recipes and specifications provided by chefs to ensure uniformity and excellence.
- Assist in the preparation of stocks, sauces, marinades, and other foundational elements of the menu.
- Maintain proper mise en place for service stations, ensuring readiness at all times.
- Uphold fine dining standards of cleanliness, organization, and attention to detail in all prep work.
- Follow food safety protocols and NYC Department of Health regulations, including proper labeling, storage, and rotation of products.
- Operate kitchen equipment (knives, slicers, mixers, ovens, etc.) safely and effectively.
- Support line cooks and chefs during service as needed.
- Assist in receiving and storing deliveries, checking for quality and accuracy.
- Communicate effectively with team members to ensure smooth kitchen operations.
- Attend briefings, meetings, and training sessions to stay informed about menu offerings, updated protocols, and industry best practices.
- Report any health & safety issues or faulty equipment promptly to management for resolution.
QUALIFICATIONS:
- 1–2 years of kitchen experience, preferably in a fine dining or high-volume restaurant.
- Culinary education or equivalent hands-on training preferred.
- Strong knife skills and knowledge of basic cooking and preparation techniques.
- Ability to follow directions precisely and work efficiently in a fast-paced, detail-driven environment.
- Punctual, reliable, and committed to teamwork.
- Availability to work evenings, weekends, and holidays as required by restaurant operations.Commitment to hospitality, teamwork, and excellence.
- Good time-management and teamwork skills.

- Must be able to stand or walk for extended periods of time and lift up to 50 lbs.
