Job Description

Cotogna is the quintessential neighborhood spot featuring seasonally and daily changing Italian cuisine with house-made pasta, spit-roasted and grilled meat, wood-oven pizza, local seafood, and produce coming from the restaurant’s own farm. In keeping with Chef Michael Tusk’s cuisine, Cotogna showcases the best of Italian viticulture with an emphasis on organic, small scale wines true to their terroir.

 
SUMMARY OF POSITION

As the Sommelier at Cotogna, your role will assist in the direction and coordination of the day-to-day wine service program. You will uphold the highest standards of service by developing, maintaining, and establishing new Quince protocols and practices. Department implementation of all company policies & procedures as outlined in the Quince & Co. Employee Handbook.

RESPONSIBILITY AND SPAN OF AUTHORITY:

Service and Operations

  • Working with the Wine Director to execute, maintain and improve the wine program.
  • Demonstrate and maintain excellent product knowledge.
  • Participate in all steps of service as needed during shift.
  • Provide wine suggestions and pair wines with menus items.
  • Assists in overseeing the updates and production of wine lists, service documents, and tasting menus
  • Educate FOH staff on new wines, 86’d items, and one count list.
  • Assist in determining wine selections and overseeing service of the private dining program.
  • Assist in physical inventory of the cellar, racking and restocking wines, processing, and approvals of deliveries.

Education and Development

  • Assist in comprehensive education programming for both FOH and BOH; classes, vender talks and tastings (i.e. Create a syllabus for wine studies)
  • Assist in creating the Wine Education calendar for Quince and lead wine classes.
  • Maintain professional relationships with purveyors and wine industry professionals.
  • Maintain personal education and continued wine studies.
  • Participation in outside trade tastings and other educational seminars

EDUCATION AND EXPERIENCE:

  • Previous fine dining restaurant experience required.
  • At least two years of experience in a sommelier role
  • Certified/Advanced Sommelier certificate through the Court of Master Sommeliers, or equivalent certification and/or corresponding knowledge/experience
  • Food Handler’s certification

OTHER REQUIREMENTS:

  • Ability to traverse all parts of the restaurant quickly and safely.
  • Must be able to move 50 pounds at a time.
  • Must be able to comply with all health and safety standards.
