What you’ll do:

The Sous Chef position will be responsible for the following:

At the kitchen - 

  • Ensure to make a logical daily prep list and manage prep production efficiently.
  • Consistently maintain a high level of cleanliness. 
  • Assist in ordering, processing, menu costing, and maintain an appropriate food cost as agreed upon by upper management.
  • Assist in all proper receiving processes; all product should be up to the standards of the restaurant group.
  • Help to ensure that there is never excessive overtime unless otherwise approved by upper management.
  • Follow all recipes as written. Notify Lead Chef and Logistics Chef if any issues arise or deviations from the written recipes are found.
  • Maintain a clean and orderly workspace.
  • Assist in maintenance of all equipment and facilities, especially kitchen spaces and work with the Sanitation Director to meet and exceed all health department standards.
  • Inventory should be checked and maintained daily to ensure no shortages.
  • All items should be reviewed and tasted as they are completed throughout the day for consistency.
  • Assist in hiring and firing of back of house staff.
  • Address any issues as soon as they arise and properly communicate those issues.
  • Responsible for teaching and training all staff on all prep and new dishes. 
  • Ensure that all staff has clean uniforms and all proper tools at each shift. 
  • When closing the commissary kitchen, responsible for ensuring all closing cleaning checklists are followed, the alarm is set and the doors are locked.
  • Report to executive sous chef/chef. 
  • Maintain communication with FOH Events team.
  • Other duties as assigned.

Off-Site Events -

  • Support all offsite event execution on culinary side - prepare BOH packouts, drive company vehicle to & from events (including pizza oven), manage offsite events as Chef Lead, assist with running service with FOH team, properly break down after service concludes. 
  • Event Supplies Inventory/Ordering.
  • Maintain proper procedures for packing out events and how to properly maintain cleanliness and unloading post event.
  • Organizing Needs for Events.
  • Manage BOH labor costs for events.
  • Attend events and manage all event staff on-site.
  • Ensure that all staff has clean uniforms and all proper tools at each shift. 
  • Mise en place should be checked at each event.
  • All recipes should be tasted as they are completed throughout the event to ensure consistency.
  • Monitor quantity of product sent off site by prep. 
  • Provide event recap reports. 
  • Address any issues as soon as they arise and properly communicate those issues.
  • Train future event chefs using training manual.
  • Other duties as assigned.
  • Drive company vehicles/Pizza ovens to CP standards (see drivers waiver).

Other -

  • Must train at Jon & Vinny’s Restaurant. 
  • During any Catering downtime/slower season - assist at other facilities including Delta, CAA, Jon & Vinny’s, Cookbook, etc.
  • To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.
  • Ability to drive trucks and vans for events.
  • Maintain an up to date Manager Servsafe certification.
  • Maintain an up to date anti-harassment training certificate.
