Job Overview:
As a Sous Chef at the Jonathan Town Club, this position will be responsible for supporting Catering Chef in planning, organizing, and directing the work of Jonathan Club Town Club Catering culinary team. Please note this is Seasonal Position.
The Sous Chef is responsible for the following:
- Master the Banquet Event Order by being the point person of all events at the Town Club Culinary Team
- Coordinate daily tasks with Catering Chef based on BEO and events’ schedules
- Supervise the daily operations and tasks of the Catering kitchen team
- Effectively communicate both verbally and in written form to provide clear direction to the team
- Maintain all equipment in a proper operational condition and cleanliness and document monthly on Jonathan Club Monthly Self Checklist
- Ensure that recipes, menu specifications, plating standards are current and communicated to the Catering kitchen team
- Ensure that all staff prepares menu items following recipes in accordance with Jonathan Club standards
- Ensure the highest level of member satisfaction, quality, operating and food costs on an ongoing basis
- Assist Catering Chef for food tastings for potential event clients including presentation and documentation
- Ensure compliance with all applicable laws and regulations
- Follow proper handling and right temperature of all food products
- Participate in training staff
- Monitor performance of Catering kitchen team, and ensure all procedures are completed on timely manner
- Identify the developmental needs of Catering culinary team and provide mentoring to improve their knowledge and skills
- Set an example to the team for following the kitchen guidelines on all matters
- Perform other duties as assigned
Requirements:
- Minimum 3 years of experience in cooking in a well-established restaurant or full-service hotel
- Flexible working hours subject to demands of the business
- Culinary Certificate or Degree preferred
Salary Rate: $69,000/year
