This bi-level Japanese restaurant and cocktail lounge offers a dynamic balance: a vibrant upstairs bar with elevated cocktails and a hidden izakaya below serving sushi, robatayaki, and small plates. *1 year experience as Sushi Sous Chef required* 


Summary/Objective

Sushi Sous Chef will be responsible for overall preparation of all menu items alongside the Executive Sushi Chef. 

Essential Functions

  1. Sets up assigned station to prepare for service.
  2. Maintains cleanliness and mis en place of station throughout service.
  3. Responsible for proper preparation of food items on assigned station(s).
  4. Responsible for identifying items prepared for guests with allergies and dietary restrictions.
  5. Works as a team with other Line Cooks, Prep Cooks, Dishwashers and FOH & BOH Management teams.
  6. Ensures Schulson Collective steps of service are met at all times.
  7. Notifies Chefs of any lags on items from assigned station(s).
  8. Creates memorable experience to build repeat business.
  9. Welcomes and acknowledges guests according to company standards, when applicable
  10. Assists with the cleaning, sanitation and organization of work area
  11. Orders ingredients and supplies as directed by Manager or Chef
  12. Cleans, sanitizes, and organizes all kitchen areas, walk-in coolers, and all storage areas according to specifications.

Physical Demands

The employee must occasionally lift and/or move up to 25 pounds and occasionally push and/or pull up to 50 pounds. The employee will spend over 4 hours daily standing or walking.

Required Education and Experience

  1. Must possess excellent knife skills
  2. High school diploma required
  3. Three (3) years sushi chef experience is preferred.
  4. Must be able to work clean and organized, producing consistent product.
