Job Description

We are seeking Sushi Cook(s) to join the opening team at Kyma Terrazza. As a key member of our culinary team, you will play an essential role in shaping our guest experience, upholding the high standards of a premier rooftop restaurant, and showcasing artistry through sushi and seafood preparation.

Sushi Cook will be responsible for planning, prepping, setting up, and providing consistent, high-quality service in all areas of sushi and cold-kitchen production. This includes menu items, daily specials, and signature dishes executed in accordance with Kyma Terrazza’s standards and plating guide specifications.

Following the Sous Chef directions and supporting all his needs. The Sushi cook is responsible for executing the Executive Chef vision and managing daily kitchen operations.

The ideal candidate should also be capable of training and supporting Line Cooks, while maintaining strict organization, cleanliness, and sanitation of work areas and equipment. Complete all cleaning schedules, temperature records, opening and closing checklists daily.

Top level of clean and safe work environment by ensuring all safety, health, and food handling standards are followed.

This role is a flexible position, and all candidates must be able to work weekends, holidays, and nights. We have 2 full-time positions available.

Essential Qualifications

• Minimum 2 years of sushi bar experience in high-volume, fast-paced environments.
• Extensive knowledge of sushi preparation, techniques, and kitchen equipment.
• Strong understanding of Japanese seafood, fish, products, and terminology.
• Advanced knife skills and ability to handle premium fish with precision.
• Ability to thrive in a high-pressure, guest-focused environment.
• Knowledge of weights, measures, and recipe yields.
• Excellent customer service and communication skills.
• Proficiency in English (verbal and written).

• Ability to perform with attention to detail, speed, and accuracy.
• Strong organizational skills: ability to prioritize, delegate, and follow through.
• Calm under pressure with the ability to resolve problems using sound judgment.
• Ability to meet production schedules and timelines with consistency.
• Ability to stand for extended periods of time.
• Ability to lift approximately 40-50 pounds.
• Ability to push or pull at least 100 pounds.
• Ability to perform reaching, stooping, and crouching motions repeatedly.
