Our Production Kitchen will amaze you!The Aspasia Coffee and Bake Shop Production Kitchen Assistant Manager will have a passion for baking and will be responsible for leading the training. This individual will be an assistant to our Production Kitchen Manager to help lead our production kitchen team to ensure proper execution of all bakery and caf items, as well as upholding Aspasia Coffee and Bake Shop standards of hygiene and company policies. Essential Duties and ResponsibilitiesAssist in coordinating production for the Production Kitchen, as well as specified items to be delivered to other shops and clientsMaximize the productivity of all kitchen staff Assist in training the production kitchen team on proper execution Understand all procedures, standards, specifications, guidelines, and training programs Inspect kitchen equipment for cleanliness and hygiene, and monitor sanitation policies to abide by all state food safety and sanitation lawsCommunicate efficiently with the Production Kitchen Manager and Stores Managers to assist in a smooth service Assist with the Production Kitchen Manager and Store Managers to ensure retail sites are fully stocked for in-store purchases and carry out purchasesControl food waste Help ensure all special events are executed properly to the clients satisfaction Ensure that all food and products are consistently prepared and served according to the restaurants recipes, portioning, cooking, and serving standards Assist with handling ordering and inventory for Production Kitchen Assist in menu development, recipe trials, and costing Assist in developing standardized recipes and techniques for food preparation and presentationProvide advice and suggestions to the Store Managers as needed Organize all pre-orders to ensure flawless execution Assist in proper opening/closing proceduresBe knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for all violations of company policies, rules, and proceduresUnderstand how to work with laminated dough, chocolate, building and icing cakes, wedding cakes and all additional aspects of a bakeryUnderstand food cost and labor cost controls Communicate and understand the mission of the restaurant Other duties will be assigned as seen fit Qualifications Minimum of 3 years management experience in high volume kitchens Proven experience as Pastry Chef, Baker, DecoratorProfessional appearance with impeccable hygiene Excellent oral and written communication skills combined with outstanding leadership, interpersonal and conflict resolution skills Excellent basic math skills Knowledge of typical commercial kitchen and bakery equipment Knowledge of sanitation principles, food preparation and baking techniques and nutrition SERV Safe Food Manager certificationWorking knowledge of baking with ingredient limitations (pastries that are gluten free, dairy free, etc.) Ability to learn all Aspasia Coffee and Bake Shop related computerized systems and applications Proficient with MS Office applications Certificate in culinary arts, pastry-making, baking or relevant field A degree in culinary arts, hospitality, or related field is a plusGreat attention to detail and creativityOrganizing and leadership skillsWork environment and Physical DemandsWork with hot, cold, and potentially hazardous equipmentMay be required to work in very warm or cold conditions for an extended periodWhile performing the duties of this job, the employee is regularly required to stand; use hands to finger, handle, or feel; reach with hands and arms; talk or hear and taste or smellThe employee must frequently lift and/or move up to 50 pounds and occasionally lift and/or move up to 50 pounds.SupervisionThe employee performs work under the supervision of Production Kitchen Manager
