Assure that dish room is operated in accordance with departmental and regulatory standards. Maintains area and equipment as directed. Assures that proper procedures are followed to provide clean and sanitary service ware. Maintain necessary logs, assures that all cleaning solutions and chemicals and other supplies are sufficient for need. Trains and monitors assigned employees.
