Pastry Cook 1As a Pastry Cook 1, at Aulani, A Disney Resort & Spa, you willbe responsible for overseeing the daily operations of all bakeryoutlets and assist with overall culinary supervision and executionof all menu categories and specific recipes for all bakery menuitems including timing, quality, temperature, portion andpresentation. Will also assist Leads and Chefs to ensure properdelivery and production of exceptional bakery items for all Resortrestaurant outlets and banquets and assist with specific Allergyrequests. Responsibilities : Performvarious pastry techniques which include, scaling, mixing, proofing,baking, decorating, and finishing Prepareproducts and replicate a recipe according to guidelines withminimal or no supervision Prepare, decorate,finish and plate all bakery items to Resort and restaurantstandards Occasionally assist in creating anddecorating cakes, wedding cakes, and custom amenities Able to understand and interpret BEO’s,Private dining and restaurant orders Utilizeproper food safety, sanitation and HACCP guidelines throughout allbakeshop food prep areas Check and maintainproper temperatures throughout all bakeshop areas Produce quality food products and understandthe impact of spoilage Assist withpreparation of items for Guests with special dietary needs Portion and arrange food on serving dishesusing proper portion control and plate presentation Additional Pastry Cook 1 Responsibilities: Ability to perform all pastry techniques whichinclude, scaling, mixing, proofing, baking, decorating, andfinishing wedding cakes and show pieces Maybe required to communicate with Guests on stage when needed toexplain cooking techniques or answer questions Formulates and prepares recipes for alloutlets and banquet requests Responsible formonthly inventory and daily food orders Assist with providing overall culinary supervision including alloutlets Responsible for Cast Member Training,progress reports, and bakeshop administration needs Assist with preparation of items for Guestswith special dietary needs Directly assiststhe chef in the preparation for off-site functions Occasionally conducts Promotional cookingdemonstrations for Guests Proficient in allStations May be required to write and pricecustom menus for banquet events Responsiblefor inventory, reading menus, and estimate food requirements tocreate a production plan BasicQualifications : Pastry Cook1​​ Minimum 5 years’ experience in culinaryfield/high volume bakery or Culinary Degree and 3 years relatedexperience; Must understand the principles of proper sanitation;Working knowledge of cost controls CulinaryEducation Degree, Certification or Equivalent; Accredited Foodsafety certification or equivalent; must complete a 6 hourpractical Additional Information : SCHEDULE AVAILABILTY Full-Time requires fullavailability for any shift at any time - including early mornings,late nights, weekends and holidays.
