KITCHEN LEAD JOB DESCRIPTIONHourly, Tipped Position | Full-time (5 days/week, ~8 hours/day)Bub and Grandma’s Pizza is seeking a Kitchen Lead to help us operate our new pizzeria in Highland Park serving the signature thin crust pies of New York, New Jersey, and Connecticut. The Kitchen lead will report directly to the Executive Chef and will be responsible for overseeing all kitchen operations, directing the team and maintaining first in class standards.Applicants should be well-versed/interested in all areas of kitchen management. This is a hands-on, hourly role ideal for someone comfortable working in a high volume, fast-paced, energetic environment, with a strong emphasis on accuracy, consistency and teamwork. The ideal candidate has experience working with pizza and is a well rounded cook as well as a skilled communicator – clear, kind, and organized in both in-person and digital settings. The Kitchen Lead works directly with the Executive Chef to maintain a consistent product and a smooth flow of service. They are expected to assist with training the entire kitchen team on specific tasks and techniques as directed by kitchen leadership.Reports to: Head Chef, OwnerRESPONSIBILITIESKitchen Operations:Direct kitchen systems and workflows as directed by the Head Chef. Conduct regular station checks and maintain service readiness. Ensure recipes are followed and help maintain standards of excellence.Monitor and maintain cleanliness, safety, and health code compliance.Provide feedback to kitchen leadership on ways to improve both operational efficiency and the physical layout of the space to support a smoother workflow.Pizza & Dough:Direct the team on pizza prep, stretching, topping, and baking according to set standards of consistency, quality, and presentation. Direct dough management: including receiving, proper storage, handling, proofing, and daily rotation.Maintain a strong working knowledge of our dough production process and support refinements as directed by kitchen leadership.Training:Train all new team members on all stations.Foster a respectful and collaborative work environment through clear communication and a positive attitude. Take on additional duties as assigned by managers to support the kitchen and team.REQUIREMENTSAbility to work full-time (5 days/week, ~8 hours/day), including weekends Solves problems proactively, not reactivelyExcellent and prompt verbal and written communicationFamiliarity with Google Sheets/ExcelSound, smart, compassionate communicator and leaderComfortable working on your feet for long periods and lifting up to 50 lbs.Experience in a high-volume kitchen preferred
