Job DescriptionJob DescriptionSushi chefs will be responsible for preparing high-quality sushi dishes for our guests while adhering to Drunken Fish recipes and maintaining an exceptionally clean kitchen. Sushi chefs will also manage proper food handling and proper storage of these high cost ingredients.ResponsibilitiesWork closely with BKEY and management teamEnsuring proper preparation, promptness, freshness, and quality of food and adherence to the highest quality food preparationFollowing recipes, including proper measuring, weighing, and mixing of ingredients dictated by the training manual and prep recipe sheetsPrepares raw fish in an appropriate mannerMakes sushi rice with perform form and consistencyMonitors inventory of supplies and handles restocking or prep work in a timely mannerImplementing hygiene policies and safe food handling practicesHandle and properly store all ingredients and foodMaintaining a clean kitchenPlating, garnishing, and arranging final presentations of dishesAssist with any other needs that may ariseCoordinating preparation of food for large catering onsite and offsite eventsAssisting with catering and deliveries offsiteEnsure that all opening and closing tasks are completed smoothly and thoroughlyResponsible for maintaining a clean, safe, and organized workplaceAccommodating allergies, dietary needs and special requestsAssist with any marketing events, such as wedding shows, trade shows, offsite events, charity events, etc. as neededFollows all federal, state and local laws, codes, and regulations outlined by management and the Employee HandbookSkills and AbilitiesAdvanced knowledge of food professional principles and standardsExtreme attention to detail and qualityUphold personal appearances and professionalism and train this standard to employeesFollow through with all assigned tasks and be flexible to accommodate quickly to newly assigned duties, including duties which may include other So Hospitality Group brandsAbility to remain calm under stressful situations and excellent problem solving abilitiesAbility to follow verbal directions and also give clear verbal directionsAbility to multitask and excellent time management skillsAbility to work positively in a fast-paced environmentAbility to be on your feet and alert for extended periods of timeAbility to lift up to 50 lbs as neededRequired Qualifications18 years or olderEducation: High school or equivalentHigh energy and passion for the industry2+ years professional kitchen experience preferred, sushi experience a plusReliable transportationMust be able to work a flexible schedule including on-call, days, nights, weekends and holidays
